Cheater Vegetable Pot Pie

For the filling:
2 stalks of celery
1 zucchini, chopped
1 head of broccoli, cut into florets
1 yellow squash, chopped
*You can add almost any other type of vegetable to the filling, just make sure everything cooks evenly

For the gravy:
2 tablespoons of extra-virgin olive oil
2 tablespoons of butter (or vegan substitute)
2 tablespoons of flour
2 cups of milk (or unsweetened vegan substitute)
1 cube of vegetable bouillon, or at least 1 teaspoon of Better than Bouillon paste
½ teaspoon of salt
½ teaspoon of dried oregano
½ teaspoon of dried thyme
½ teaspoon of ground black pepper

This recipe is not technically a pie because we will put the filling on top of halved biscuits. This saves time as the vegetables will only need to cook once, instead of the two times needed to roast the vegetables and bake the filled pie. For the dough, you can use your favorite biscuit recipe or buy pre-made dough. Cook the biscuits first to have them ready, or cook with the filling if you want them served hot.

To make the filling: Preheat the oven to 425℉ and line a baking sheet with parchment paper. Spread out the vegetable filling on the baking sheet and drizzle with olive oil. Cook for 20-22 minutes, making sure the vegetables cook evenly and are tender when finished. After the vegetables have cooked for about 10 minutes, start the gravy.

To make the gravy: Add the butter to a deep pan and cook until melted. Then, add the flour and mix to form a paste. Slowly add the milk, stirring constantly. Add the bouillon, salt, oregano, thyme, and pepper and allow the mixture to simmer for about 5 minutes. Once the gravy is thick and smooth, toss in the finished vegetables to coat with the mix. Pour filling over biscuits.
